Blended Chunky Monkey Ice Cream

This Chunky Monkey Ice Cream uses simple, natural ingredients. Just a note for a diabetes-friendly version: you may want to use unsweetened almond milk instead of regular milk, and watch the portion size due to the natural sugar content in bananas and dates.

Ingredients

  • 1 banana frozen
  • ¼ cup milk may substitute almond or coconut milk
  • 2 dates pitted
  • 1 tbsp cacao powder or unsweetened cocoa powder
  • 1 tsp cinnamon
  • ¼ cup pecans

Optional Toppings

  • pecans chopped
  • coconut flakes, toasted
  • berries

Instructions

  • Place the liquid in the blender first, then place everything else in the blender (not the optional toppings) and blend until smooth. I use my tamper to make sure everything gets pushed down. Remember, there is not a lot of liquid in this, so you will need to give the blender a little assistance.
    1 banana, ¼ cup milk, 2 dates, 1 tbsp cacao powder, 1 tsp cinnamon, ¼ cup pecans
  • Scoop into bowls or glass cups and top with optional toppings.
