Ingredients

  • 1 cup arugula
  • 1 orange peeled and sliced into rounds or segments
  • 1 blood orange peeled and sliced into rounds or segments
  • 1 grapefruit small, peeled and sliced into rounds or segments
  • 1 avocado ripe, sliced
  • 2 tbsp pistachios raw, unsalted, roughly chopped
  • 2 tbsp mint fresh leaves, torn
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 pinch salt
  • 1 pinch pepper ground

Equipment

  • Small bowl (for dressing)
  • Serving plate or shallow salad bowl

Instructions

  • Arrange arugula on a serving plate or shallow bowl.
    1 cup arugula
  • Layer the citrus slices and avocado on top.
    1 orange, 1 blood orange, 1 grapefruit, 1 avocado
  • Scatter the chopped pistachios and torn mint leaves over the salad.
    2 tbsp pistachios, 2 tbsp mint
  • In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.

  • Drizzle the dressing evenly over the salad.
