Wash the zucchinis and slice them into thin rounds, about 1/8 to 1/4 inch thick.
2 medium zucchini
Arrange zucchini slices on a paper towel, and sprinkle both sides of the zucchini slices with salt. Cover with another sheet of paper towel, and let sit for 10 minutes to allow the salt to draw out moisture from the zucchini. Pat the zucchini slices dry with a paper towel to remove excess moisture.
½ tsp salt
In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, and pepper. Add the zucchini slices to the bowl and toss them gently to coat them evenly with the seasoning mixture.
1 tbsp olive oil, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp paprika, ¼ tsp pepper
Air fryer instruction: Preheat your air fryer to 400°F (200°C). Place the seasoned zucchini slices in the air fryer basket in a single layer. You may need to cook them in batches depending on the size of your air fryer. Air fry the zucchini slices at 400°F (200°C) for about 8-10 minutes, flipping them halfway through the cooking time, or until they are crispy and golden brown.
Oven instructions: Preheat the oven to 400°F (200°C). Lay zucchini slices on a baking sheet lined with parchment paper and bake for 15-20 minutes or until crispy. Note that they may take longer to crisp up compared to air frying.
Remove the zucchini chips from the air fryer, sprinkle with parmesan cheese (if desired) and let them cool slightly before serving.
2 tbsp parmesan cheese
