- cabbage (shredded*) 1 ½ cup
- carrot (shredded) ⅓ cup
- red onion (thinly sliced) ¼ cup
- cilantro (chopped) 1 tbsp
- peanuts (chopped) 2 tbsp
- chicken (cooked, shredded*) ½ cup
Orange citrus vinaigrette
- olive oil 2 tbsp
- rice vinegar 1 tbsp
- orange juice (from fresh oranges) ¼ cup
- sesame oil ½ tsp
- salt 1 Pinch
- pepper 1 Pinch
Cooking Tips
Chicken: Cook and shred chicken breasts or use pre-cooked rotisserie chicken for convenience.
Vegetables: Finely shred cabbage, grate carrots, and dice red onion for the filling. Option to sauté them lightly before adding them to the cups for added flavour.
Peanuts: Toast peanuts in a dry skillet for a few minutes until fragrant, then chop them finely for added crunch and flavour.
Instructions
- Preheat the oven to 350F.
- Brush a 12-cup muffin tin with olive oil, and gently press wonton wrappers into muffin tins to form cups. Lightly brush wonton cups with olive oil and bake in the oven for 6-8 minutes until golden brown and crispy.12 wonton wrappers, 1 tbsp olive oil

- Pour dressing onto chicken salad mixture and stir until well combined.

It was good, instead of using the sauce I had left over buffalo chicken breast I cut up and added green onion and used that instead so the buffalo taste came thru. I also did heat the cabbage carrots and put a bit of fresh basil it was tasty. I think you can just about add anything you have will do again.
